The Thai roti is based on the flat bread like snack that probably originated in India. The pancake like concoction is made by combining flour, eggs, condensed milk, water, salt and sugar. The mixture is then fried in margarine or clarified butter before a topping of your choice is added.
Locally here in lower central Thailand the roti is usually eaten a a sweetmeat topped with sticky sweet condensed milk and sugar. Not great for the figure or your teeth but very enjoyable to eat.
Today’s photograph shows a mobile roti vendor who comes along our street most days, you call him by literally shouting “roti,” make your order and wait while he prepares the ingredients and cooks the snack before your eyes.
The roti is either served rolled up and wrapped in greased proof paper or cut into square shapes and deposited on a plate you supply.
Although most Roti vendors hold Thai citizenship they or their parents originated from the Indian Sub-Continent, particularly Bangladeshi.
